Yesterday I had an awesome interview with a guy I consider a mentor and a good friend, William Wall of Billy Bones BBQ.

Now Billy Bones isn’t a guy who pulls any punches or hides behind so called “secrets.” No sir re.

 

In fact, one of the main themes I took from our conversation yesterday was the only real “secret” is that there are NO secrets!

Billy’s really from the old school. He’s learned from some of the greats in Barbecue–many of whom you might not recognize like the great Hubert Green, and a man named “Jimmy” who used to cook BBQ on the side walk out on Reading Road in Cincinnati, Ohio where Billy says his heart still remains today.
